Fabulous knife
This knife chops better than a food processor!
I also have the 8 inch version. These knives are also great for slicing. Wusthof knives are high quality and reasonably priced

Great knife!
Love this knife! I have small hands and got the 5 inch and love it. It was recommended to me by a local caterer. She was so right. I would love to have the 7 inch too.

Nice size, part of our larger 12 piece set. Hopefully will hold its edge during normal usage.

5" chopping knife
I would rather have chosen a longer blade. I purchased online. A great knife though.

What is santuko?
BEST ANSWER: Santoku knives are best known for their sharp edges, either beveled or hollow ground, which enhances their cutting performance. Another feature of the Santoku knife is the 'Granton edge' release pattern (dimples) on the blade, that not only adds style, but helps to release thin slices and sticky food after slicing. That food release ability makes this kind of knife ideal for a wide range of cutting tasks.

How thin is the spine on the 5" Santoku? I'm looking for a thin blade that's 1/16" or less.
BEST ANSWER: The spine (non-cutting) is about 1/16" at the thickest and gets smaller as it rounds to the point. The cutting edge is much, much smaller than 1/16" for the entire length of the cutting blade. This is a wonderful knife - I use it for chopping fruit and vegetables.

How does one determine which size (7"or 5") Hollow Edge Santoku knife to purchase?
BEST ANSWER: A lot goes into that decision, such as what you are going to use it for, your comfort level with the knife, how much food you are processing, etc. I love the 5" for vegetables...dicing, slicing, etc. I use the 7" primarily when working with meats or chopping vegetables and herbs into a fine dice. And the 3" is my go to knife for almost everything else. For me, it is all about the control I get with each knife.

Can a left-handed person use this knife?
BEST ANSWER: Yes, there is nothing directional about the blade, edge or handle so it is the same/symmetrical for either hand.
