Stuffed Vegetables with Couscous
Serves
Makes 3 to 4 servings
Ingredients
  • 1 medium white onion
  • 2 zucchinis or yellow squash
  • 3 small firm tomatoes
  • ¼ cup couscous
  • 1/8 cup raisins, roughly chopped
  • 1/8 cup pine nuts, roughly chopped
  • 1 tbsp. cumin
  • 3 tbsp. extra virgin olive oil
  • Salt
  • Pepper


Procedure
Filled with nutrients and flavor, this colorful and hearty dish will satisfy the entire family. For use with the large Lékué Steam Case and Lékué Rice Cooker.

Wash the vegetables. Cut the ends off of the zucchinis and then cut each zucchini into 3 even sections. Remove the center with a melon baller, but save the insides.

Slice the top of the tomatoes off, and core the inside with a spoon, taking care not to make a puncture. Save the insides.

Dice the onion and place in the Lékué Steam Case. Add 2 tbsp. water and steam in the microwave for 3 minutes at 800 watts.

Chop the insides of the vegetables and mix with cooked onion; set aside in a mixing bowl.

Using the Lékué Rice Cooker, make the couscous, ¼ cup couscous with ¼ cup water for 2 minutes at 800 watts.

Add the couscous, raisins, pine nuts, cumin, salt and pepper to the chopped vegetables. Mix together.

Spoon the couscous mixture into the cavities of the vegetables.

Pour ¼ cup water into the bottom of the steam case fitted with the tray, place the stuffed vegetables on top, close the lids and cook in the microwave for 5 minutes at 800 watts. If the vegetables aren’t quite done, cook for 30 second intervals until vegetables are tender. Serve.
