Chicken Curry in a Hurry
Serves
Makes 6 servings
Ingredients
  • 2 tablespoon peanut oil
  • 5 scallions, chopped
  • 2 tablespoon green curry paste
  • 3 cups coconut milk
  • 1 chicken bouillon cube
  • 6 chicken breasts, cut into 1-inch cubes
  • Large bunch of fresh chopped cilantro
  • 1 lime


Procedure
Heat the oil in a preheated skillet. Add the scallions and stir-fry over medium heat for about 1 minute. Add the curry paste, coconut milk and bouillon and bring gently to a boil.

Add the chicken, half the cilantro and stir. Reduce the heat and simmer for 10 minutes. Garnish with the remaining cilantro and a lime wedge. Serve with cooked rice or noodles.
