Pork Loin with Ginger Pomegranate Sauce

Makes 4 servings
Ingredients
- 2 pounds pork loin
- Pepper to taste
- ¾ cup orange marmalade
- ½ cup pomegranate juice
- 2 teaspoons grated ginger
- 1 lime, juice
- 2 tablespoons soy sauce
- 3 cloves garlic, minced
Procedure
Set multi-cooker on BROWN setting. Add oil to the cooker. Pepper the pork and add to the cooker.
Brown the roast on all sides (should take about 5 minutes).
Mix the remaining ingredients and pour them over pork. Close lid. Turn knob to pressure and set multi-cooker on HIGH pressure cooker setting for 35 minutes and let come down naturally.
Remove pork loin and cover with aluminum foil.
Set cooker on BROWN and bring sauce to a boil. When desired consistency is reached, pour over the pork loin and serve.
