Sesame Crusted Salmon with Zucchini

Makes 2 servings
Ingredients
  • 1 tablespoon white sesame seeds
  • 1 tablespoon black sesame seeds
  • 1 teaspoon peanut oil
  • 2 salmon fillets, skin on
  • 1 zucchini, cut into ribbons


Procedure
Place the sesame seeds on a tray and mix to combine. Press the salmon, skin-side down, into the sesame seeds to coat.

Heat a large nonstick frying pan over medium heat. Add 1 teaspoon peanut oil and cook the salmon, skin-side down, for 3 minutes. Add the zucchini ribbons to the pan. Turn and cook the salmon and zucchini for an additional 2 minutes.
