Mac & Cheese

Makes 4 servings
Ingredients
- 4 tablespoons unsalted butter
- ½ cup all-purpose flour
- 6 cups low fat milk
- 14 ounces dried pasta
- 3 cups grated cheddar
- 1 cup grated Gruyere
- 1 teaspoon Dijon mustard
- Salt and pepper
Procedure
Heat the broiler. In a large skillet on medium heat, melt the butter. Whisk in flour and cook, stirring, 1 minute. Very gradually whisk in milk and bring to a simmer. Add pasta and cook, stirring constantly and scraping bottom of pan, until tender, 8 to 9 minutes.
Remove from heat, stir in ¾ of the cheese and mustard, and season with salt and pepper. Top with remaining cheese and broil until golden brown, about 2 minutes.
