Grilled Cheese

Makes 4 servings
Ingredients
  • 1 large crusty bread
  • 4 tablespoons mayonnaise
  • 1 lb. grated aged cheddar or aged Dutch Gouda
  • Pepper


Procedure
This recipe was designed for the Staub Steam Griddle.

Using a bread knife cut 8, one inch slices from the crusty bread. Brush one side with mayonnaise. Turn them and evenly divide the grated cheese among the slices. Sprinkle with pepper to liking.

Preheat a steam griddle on medium/high heat for 2 minutes. Reduce to medium heat. Add 4 slices of bread, mayo side down, and cover with lid.

When cheese starts to melt create two sandwiches out of the 4 slices by putting them on top of each other. (Mayo brushed sides top and bottom)

Keeping the lid off, brown on the other sides until golden and crispy. Keep warm in a preheated oven on 280°F. Repeat for the other two sandwiches. When cooked, transfer to cutting board and allow to cool 1 to 2 minutes before cutting them.
