Makes 4 servings
Ingredients
  • 4 slices brioche (1-inch thick)
  • 4 eggs
  • ¼ cup milk
  • ¼ cup heavy cream
  • 2 tablespoons sugar
  • ½ vanilla bean
  • ½ teaspoon cinnamon
  • Pinch salt
  • Pinch nutmeg
  • 2 tablespoons butter


Procedure
This recipe was designed for the Staub Steam Griddle.

In a mixing bowl, mix milk, heavy cream, eggs, sugar, salt, nutmeg and pods from vanilla bean. Add the brioche slices and let soak for 2 to 4 minutes.

Preheat the steam griddle on medium/high heat for 60 seconds. Reduce to medium. Add the brioche and cover with lid.

When golden brown, flip them. Keeping the lid off, brown on the other side.

Transfer to a plate. Serve with berries and top with powdered sugar or maple syrup.
