Chocolate Chip, Pecan & Oatmeal Cookies

Makes 24 cookies
Ingredients
  • 4 ounces (115g) butter, softened, chopped
  • ½ cup (100g) sugar
  • ½ cup (100g) firmly packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1⅓ cup (160g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (170g) dark choc chips
  • ½ cup (60g) pecan halves, chopped
  • ¼ cup (20g) rolled oats


Procedure
  • Prep time: 10 minutes
  • Cook time: 12- 13 minutes


Line 2 baking trays with non-stick baking paper.

Assemble bench top mixer with a flat or scraper beater. Place butter, brown sugar, caster sugar, and vanilla into the bowl. Mix on medium speed or Creaming/Beating for 2 minutes until pale and creamy. Add egg and beat until just combined. Sift flour, baking powder and salt, then add to egg mixture on low speed or Folding/Kneading until just combined.

Add chocolate chips, nuts and oats and mix on low speed Folding/Kneading until just combined. Roll heaped tablespoons of mixture into balls and place, 3-4cm apart, on prepared trays. 6 per tray. Select COOKIES/SuperConvection/315F/12-13minutes. Press START to preheat.

Once preheat has finished place trays on rack position 3+6 and for 12 minutes, rotating ½ way through baking (change top to bottom and front to back).

Set aside for 5 minutes to cool slightly before transferring to a wire rack to cool completely.

Tip: If using only one tray at a time use COOKIES/Convection/325F/Rack5 for 12-13minutes and rotate halfway through.
