Pineapple Lime Sorbet

Ingredients
- 1 fresh pineapple (about 4 cups), cored and diced
- ½ cup granulated sugar
- 1 teaspoon lime zest
- 4 tablespoons fresh lime juice
- 1 cup coconut water
Procedure
We love ripe, fresh pineapple! However, canned, unsweetened and drained pineapple works beautifully as well.
Simply add all the ingredients to a blender and blend into a smooth puree. Transfer the mixture to an ice cream maker and churn according to the manufacturers’ instructions. Enjoy right away or transfer to a freezer-proof container to chill until firm.
