Ahi Poke Bites

Ahi Poke Bites
Serves
Makes 4 servings
Ingredients
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons soy sauce
  • 1 teaspoon granulated sugar
  • 1 teaspoon finely grated ginger
  • 1 teaspoon garlic chile paste, such as Sriracha, more to taste
  • 1 tablespoon toasted sesame seeds, a mix of white and black, plus more for garnishing
  • ½ cup thinly sliced green onion
  • 2 sheets roasted nori, cut into fine ribbons
  • 1 pound sashimi grade ahi tuna, sliced into ½-inch cubes
  • Flaky sea salt
  • 1 bag Hawaiian kettle style potato chips


Procedure
The word “poke” means to cut; Ahi poke are cubes of sashimi grade tuna marinated in soy and sesame, a raw seafood salad that is a local Hawaiian favorite. We have added a little crunch to this fun delicious dish by serving it as a bite on top of Hawaiian-style kettle chips.

In medium bowl, combine sesame oil, soy sauce, sugar, ginger and chile paste and whisk until well combined and sugar is dissolved. Add the sesame seeds, green onions and nori and gently fold in the ahi tuna. Taste and adjust seasoning with salt.

To serve, lay potato chips onto a serving platter and top each chip with a generous spoonful of poke. Sprinkle with sesame seeds and serve immediately.
