In a Collins glass, gently muddle 2 cucumber wheels in the lime juice until they’re lightly crushed. Fill the glass with ice, add the gin and top with tonic water. Stir once or twice, garnish with the remaining cucumber wheel, lime wheel and herb sprigs (if using) and serve.
