Citrus and Smoke

Serves: Makes 1 cocktail

Ingredients:

  • Honey
  • Flaky sea salt
  • 1½ ounces mezcal
  • Tonic water
  • 1 (2-inch) strip of grapefruit peel, with some pith attached


Procedures:

Pour the honey onto a small saucer or plate. Rim a rocks glass with the honey and sprinkle with the sea salt to coat. Fill the glass with ice and add the mezcal. Top off with the tonic water.

Flame the grapefruit peel: light a match over the drink and squeeze the peel so the citrus oils release and flame over the cocktail. Drop the flamed peel into the drink and serve.
