Honey Ginger Wings

Honey Ginger Wings
Serves
Makes 20 wings
Ingredients
  • For the Glaze:
  • ¼ cup Bees Knees Spicy Honey
  • 2 tablespoons soy sauce
  • 1-inch piece of ginger, peeled and sliced
  • 1 garlic clove, sliced
  • ½ teaspoon whole peppercorns
  • ¼ teaspoon cayenne powder

  • For the Wings:
  • 3 scallions, whole
  • 2 pounds chicken wings, drumettes and flats separated
  • 1 tablespoon grapeseed oil
  • 1 teaspoon kosher salt


Procedure
Preheat grill on medium heat.

Mix glaze ingredients plus ¼ cup water in a saucepan and set on the grill to simmer. Lay scallions on the grill and cover.

In a large bowl, toss wings with oil and salt. Grill wings on one side for 4 to 5 minutes or until nicely charred. Remove scallions and glaze and set aside. Turn the wings and grill for another 4 to 5 minutes until cooked through.

Strain glaze into a separate large bowl, discarding the garlic, ginger, peppercorns. Remove finished wings to the bowl, toss to coat, and transfer to a platter. Roughly chop grilled scallions to garnish wings before serving.
