Instant Pot Christmas Wassail

Instant Pot Christmas Wassail
Serves
Makes 6 to 8 servings
Ingredients
  • 2 apples, seeded, cored and halved
  • Peels of 3 oranges
  • ¾ cups brown sugar
  • 1 cinnamon stick
  • ½ teaspoon whole cloves
  • ½ teaspoon all spice berries
  • ¾ cups cranberry juice
  • 3½ cups apple juice
  • 3 cups hard cider
  • 1 cup madeira wine
  • rum


Procedure
Whip up a batch of this traditional holiday drink with a modern kitchen tool, the Instant Pot. Mulled cider and wine is combined with apple, orange and spiced infused fruit juice. Top each serving with a splash or two of rum.

Place the apples and orange peels into the Instant Pot. Sprinkle them with brown sugar.

Add the cinnamon stick, cloves, all spice, cranberry juice and apple juice. Stir to combine. Secure the lid on the Instant Pot. Cook on high pressure for 15 minutes.

Turn off the Instant Pot and quick release the pressure. Open the lid and remove the apple pieces.

Add the hard cider and madeira to the Instant Pot. Cover and cook on high pressure for 5 minutes. Turn off the Instant Pot. Release the pressure naturally after 5 minutes.

After five minutes, release any remaining pressure. Strain the wassail into a tureen to serve immediately or strain into a large pan and keep warm on the stovetop.

Serve warm with a generous splash of run and a cinnamon stick.
