Graham Cracker Granola Apple Cobbler
Serves
Makes 8 servings
Ingredients
  • Cobbler:
  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter
  • ½ tsp cinnamon
  • 6 granny smith apples, sliced
  • Vanilla ice cream (optional)

  • Granola:
  • 1 cup rolled oats
  • ½ cup sliced almonds
  • ½ cup graham cracker crumbs
  • ½ tsp cinnamon
  • 1 tbsp brown sugar
  • 1 tbsp honey
  • 1 tbsp maple syrup
  • 1 tbsp melted coconut oil
  • ⅛ tsp salt
  • 1 egg white


Procedure
Make the Granola: combine the oats, nuts, cracker crumbs and sugar in a medium bowl. In a separate bowl, combine the syrup, oil, salt and egg white. Stir the wet ingredients into the dry. Spread onto a sheet pan in a single layer. Bake at 350°F for 20 minutes, stirring halfway for even browning.

Make the Cobbler: Grease a 1-quart baking dish or line with parchment paper. Combine flour, sugars, butter, and cinnamon in a large bowl. Use a pastry cutter to blend until crumbly. Reserve half of this mixture for topping. Fold in sliced apples. Assembly: Pour apple mixture into the prepared baking dish. Sprinkle the top with the reserved flour mixture. Bake until apples are tender and topping is golden brown, 35 to 45 minutes. Cool before serving. Top cobbler with granola. Vanilla ice cream optional but highly suggested!
