Mini Cuban-Style Rice Pudding

Ingredients:

  • ½ cup uncooked white rice
  • 1½ cups water
  • 1 cinnamon stick
  • 1 quart whole milk
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • ¼ teaspoon cinnamon, ground


Procedures:

Cook the rice with water and cinnamon stick until soft. Remove the cinnamon stick and drain off any excess water. (Most of the water should have been absorbed into the rice.)

Add milk, salt, vanilla extract, and sugar to rice and cook over low heat, uncovered, stirring occasionally until thick, about one hour. Sprinkle with cinnamon. Serve and enjoy!
