Grilled Lemon Spritzer

Serves: Serves 6

Ingredients:

  • ¾ cup sugar
  • ¾ cup water
  • 2 sprigs rosemary (plus extra for garnish)
  • 8 large lemons
  • ½ cup vodka
  • 1 bottle prosecco

Procedures:

In a small saucepan bring sugar, water and rosemary to a simmer, stirring until sugar is dissolved. Remove from heat and allow to steep for 20 minutes before removing rosemary. Discard rosemary and transfer to an airtight container. Rosemary simple syrup can be stored for 2 weeks.

Preheat grill to medium heat. Cut the lemons in half and set openside down directly on grill. Allow to cook until just charred. Remove from grill and allow to cool slightly. Once cooled to the touch, juice lemons into a large drink pitcher. (Lemon juice should yield roughly 1 cup).

To the pitcher add the rosemary simple syrup, vodka and prosecco. Stir and serve over crushed ice.
