Scrappy Popcorn

Ingredients
  • ⅓ cup vegetable oil
  • Small handful hearty herbs, stems and all (such as thyme, rosemary and sage)
  • ½ cup popcorn kernels
  • 2 tablespoons nutritional yeast
  • 2 teaspoons smoked paprika
  • 1 teaspoon Aleppo-style pepper
  • 1 teaspoon fine sea salt


Procedure
In a large pot, heat the oil and herbs over medium heat. When oil is fragrant, remove herbs (you can add them back in later).

Add popcorn kernels and cover the pot. Cook, shaking frequently, until popping slows. Remove from heat and immediately sprinkle with spices and salt. Crumble fried herbs on top and eat immediately.

Notes:
You know your oil is hot when a couple popcorn kernels added to the pot start to pop!
