Eggs Benny Burger

Eggs Benny Burger
Serves
Makes 3 burgers
Ingredients
  • 1 lb grass fed ground beef
  • 3 hamburger buns
  • 3 slices swiss cheese
  • 3 poached eggs
  • 6 slices smoked ham
  • Pinch of sea salt and pepper

  • For the hollandaise:
  • 3 egg yolks
  • ½-cup melted ghee
  • Pinch of sea salt
  • Squeeze of fresh lemon
  • Pinch of smoked paprika


Procedure
Add ground beef to large mixing bowl with a pinch of salt and pepper. Roll and pat them into 3 different patties then place on a plate and refrigerate for 30 minutes. While the patties chill, poach the eggs and place into an ice bath until ready to top with burger.

Heat a small pot over medium heat with 3 inches of water and bring to a gentle simmer. Place a glass pyrex bowl on top of the pot. Add 3 egg yolks and lemon juice to bowl and begin to whisk vigorously until it thickens. Add pinch of salt and paprika. Drizzle in melted butter slowly and continue to whisk until the sauce is well combined and has a creamy consistency.

Add hollandaise to a thermos or cover with a lid to keep warm until ready to use. Heat a large skillet on high heat and add a splash of avocado oil. Remove patties from the fridge, season with salt and pepper and place in the hot pan. Cook for 2-3 minutes then flip. Cook for an additional 2 minutes then add cheese. Cover with a lid for 30 seconds allowing cheese to melt.

Add poached eggs to a small pot of warm water to heat up for about 1 minute then remove. Begin to assemble your burger! Start with the bun, little mayo, burger, ham, poached egg, and hollandaise. Enjoy and don't be afraid to get messy!
