The standard for determining the quality of any flatware is its constituent percentages of chromium and nickel. Chromium provides strength to utensils, as well as resistance to corrosion and rust, while nickel lends shine and luster. Stainless steel flatware is described by three ratios to indicate the relative amounts of chromium and nickel: 18/10, 18/8 and 18/0. The ratios 18/10 and 18/8 are considered the highest quality.
