Class Description: Theo Chocolate, the first organic and Fair Trade certified bean-to-bar chocolate factory in North America, is dedicated to making the world a better place and is finding ways to do so through their passion, bringing out the best in cocoa bean. Join us for this unique look into the world of chocolate making as Theo Master Chocolatier Chad Furhreck demonstrates the secrets for perfect table-tempered chocolate, tips for tempering at home, and the art of properly cooking sugar for all types of delicious uses.
During this two-hour, demonstration-style class, Chad will use these techniques to create two amazing confections that are perfect for the holiday table and a treat to make: toffee dipped in dark chocolate and garnished with cocoa nibs, and fig, fennel, and almond dacquoise with dark chocolate cream. Attendees will be able to sample treats during the class and take home samples. Additionally, all attendees will go home with a signed copy of Theo’s new cookbook: Theo Chocolate, Recipes & Sweet Secrets from Seattle’s Favorite Chocolate Maker. Deborah Music, Theo co-founder, will also be on hand to answer questions, chat about the history of Theo Chocolates, and to discuss this wonderful new book.
