Pea Flower Martini

Pea Flower Martini
Serves
1 cocktail
Ingredients
Butterfly pea flower simple syrup:
  • 4-6 dried butterfly pea flowers
  • 1/2 cup granulated sugar
  • 1/2 cup hot water

Cocktail:
  • 2 ounces vodka
  • 1/2 ounce triple sec
  • 1 ounce butterfly pea flower simple syrup
  • 1 ounce freshly squeezed lemon juice, chilled
  • Lemon peel to garnish

Procedure
Butterfly pea flower has a delicate tea-like flavor. The petals have a unique characteristic, when steeped in a liquid and combined with an acid, the mixture will turn from blue to bright pink. Once you have made the “brew”, add to drinks, teas and desserts for vibrant pink hues.

To brew simple syrup: To a small saucepan set over medium-low heat add pea flowers, sugar and water. Heat, stirring frequently until sugar is dissolved. Remove from heat and steep pea flowers in simple syrup until mixture is bright blue. Strain mixture through a fine- mesh strainer and remove flowers. Chill syrup until ready to use.

To prepare cocktail: To a cocktail shaker filled halfway with ice, add vodka, triple sec, and pea flower simple syrup. Top with lid and shake for approximately 30 seconds until very cold.

Strain into a chilled martini or cocktail glass. When ready to serve, pour in chilled lemon juice and watch the color change! Squeeze lemon peel over cocktail, then drop in as garnish.

Recipe variations:
  • Butterfly pea flower syrup can be kept in the refrigerator for 2 weeks.
