Perfect Steam-Grilled Pork Chops

Makes 4 servings
Ingredients
  • 4 center cut pork chops
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon paprika or smoked paprika
  • ½ teaspoon ground cumin
  • 1 tablespoon vegetable oil
  • ¼ cup beer, white wine or water

OPTIONAL: Sprinkle pork chops with salt, cover and chill for 1 hour, or overnight.

Procedure
In a small bowl, combine pepper, paprika and cumin. Pat chops thoroughly dry and rub with spice mixture. Let sit for 15 minutes.

Heat steam grill over high heat. When the pan is hot, brush chops with oil and set 2 chops in the pan. Pour in beer, wine or water along the edge of the pan (not onto the chops). Cover, reduce heat to medium-low, and cook until grill marks form, about 4 minutes. Turn chops over, cover and cook until cooked through and grill marks form on the other side, about 4 more minutes (bone-in chops may take an extra minute or so). Transfer chops to a plate or serving platter, cover and let sit for at least 10 minutes. Repeat with remaining chops.
