Coconut Matcha Popsicles

Coconut Matcha Popsicles
Serves
Makes 6
Ingredients
1 ½ cups coconut cream, chilled
¾ cup full fat coconut milk
2 tsp matcha powder
4-5 tbs maple syrup
1 tsp vanilla extract
Pinch salt
2 tsp vodka, optional (helps to prevent ice crystals from forming)
Procedure
Place ingredients in the order listed into a blender and blend on medium speed until smooth. Taste and add additional sweetener if needed.

Fill each popsicle mold to the fill line. A few air bubbles may appear—to remove, simply insert a knife into each mold and give it a few gentle stirs.

Insert the stick base into each mold and place in the freezer for 6-7 hours, ideally overnight.

Run each mold under a bit of warm water to loosen, then remove each popsicle and enjoy!
