Peach Ice Cream

Peach Ice Cream
Serves
Makes 1 quart
Ingredients
  • 3 cups sliced fresh peaches (4 medium sized)
  • 2 tablespoons freshly squeezed lemon juice
  • ¼ teaspoon kosher salt
  • 1 cup milk
  • ¾ cup granulated sugar
  • 1½ teaspoons vanilla extract
  • 1 cup heavy cream
Procedure
Blanch fresh peaches in boiling water for 30 seconds and cool in an ice bath to loosen the skin, which slips off easily.

Purée the peaches, sugar, lemon juice, vanilla, salt and ½ cup cream in a blender or food processor. Add the remaining cream and milk and pulse to combine. Chill to 40°F, then pour 5 ounces into the Zoku Ice Cream Maker and follow the instructions included in the manual.
