Shun cutlery will likely hold the edge longer because they are Eastern-style knives, but Zwilling knives will be less brittle and easier to sharpen. Both Kramer knives have the same warranty through SLT, as we guarantee your satisfaction in full as long as you own them. Zwilling Kramer carbon steel knives will have the highest care requirements, as they need to be washed and dried immediately and wiped frequently while being used on anything acidic, such as citrus. Zwilling Kramer stainless Damascus and Shun Kramer will have very similar care requirements, as they are both stainless rather than carbon steel.Although knife preference is a matter of opinion, I would suggest going with the Zwilling Kramer knives for 2 reasons: #1, Zwilling Kramer knives are the closest resemblance you can get to a custom-made Bob Kramer knife. #2, The Shun Kramer knives have been discontinued and Bob Kramer terminated his contract with Shun. No more of these knives will be created
