German Potato Salad

German Potato Salad
Serves
Makes 8 servings
Ingredients
  • 3 lbs red potatoes
  • 6-7 slices bacon
  • 1 cup onion, diced
  • ½ cup apple cider vinegar
  • ¼ cup granulated sugar
  • 1 + ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp parsley, chopped
Procedure
Wash and scrub potatoes, then slice them into 1-2 inch wide cubes, about the same size.

Bring water to boil in a large pot, then add potatoes and 1 tsp salt. Cook for 12-15 minutes, or until tender. Drain water and set potatoes aside.

Cut bacon into 1-inch pieces. In a skillet, pan fry bacon until crispy.

Remove bacon pieces from skillet and set aside, leaving bacon grease in the skillet.

Heat skillet with bacon grease to medium heat. Add diced onion and pan fry until they are soft and slightly browned. Add apple cider vinegar, sugar, ½ tsp salt and black pepper. Stir to combine and bring to a boil.

Switch off heat and add potatoes and half of the bacon pieces to skillet. Stir to combine until potatoes absorb most of the liquid.

Serve potato salad and garnish with parsley and more bacon. Enjoy!
