Grilled Chipotle Lime Shrimp

Ingredients
- 1 pound jumbo shrimp, peeled and deveined (leave tails on)
- 2 tablespoons olive oil
- 1 teaspoon chipotle powder
- ½ teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- 1 tablespoon minced garlic (3-4 cloves)
- 2 limes
- 1 tablespoon chopped fresh cilantro
- Optional: 1 tablespoon honey (for sweetness)
- Warm tortillas, salsa, avocado, sliced radishes, red cabbage or other taco fixings for serving.
Procedure
In a large bowl add the peeled and deveined shrimp, olive oil, chipotle powder, cumin, smoked paprika, minced garlic and salt.
Add the zest and juice of one lime.
Using a rubber spatula, toss shrimp until well coated.
Marinate in the refrigerator for 15-30 minutes (no more)
Heat Pro Ceramic Seafood Pan over medium high heat on the grill
Place marinated shrimp in wells and grill for 2-3 minutes per side, just until pink and opaque.
Squeeze more lime juice on top of cooked shrimp and sprinkle with fresh cilantro.
Serve with more lime wedges on the side and serve shrimp on their own or in warm tortillas with your favorite taco toppings.
