Grilled Salmon with Pineapple Salsa

Grilled Salmon with Pineapple Salsa
Serves
4 servings
Ingredients
Salmon: 
1 lbs salmon

1 tsp smoked paprika
2 tsp salt
½ tsp black pepper

Pineapple Salsa:
8oz canned pineapple tidbits, drained
1/2 cup tomatoes, diced
¼ cup red onions, diced
1 small lime, juiced
2 tbsp cilantro, chopped
2 tbsp jalapeño, chopped
1 tsp salt
Procedure
Fire up grill to prepare for grilling.

In a small bowl, combine ingredients for pineapple salsa. Mix well and set aside.

Bring together smoked paprika, salt and black pepper. Season salmon with it on both insides.

Grease cast iron plate, place salmon on cast iron.

Grill until salmon is cooked. Cover grill if needed. When the internal temperature of the thickest part of salmon reaches 145°F, remove salmon from grill.

Top grilled salmon with pineapple salsa

Serve and enjoy!
