Lasagna with Zucchini Noodles

Ingredients
- 4 zucchini
- 1 cup (123g) ricotta cheese
- ½ cup mozzarella (62g)
- 2½ cups (595mL) tomato sauce
- ¼ cup (60mL) basil
- Salt and pepper, to taste
Procedure
Preheat oven to 350°F.
Process zucchini with the Sheet Cutter Attachment to make long sheets or "lasagna noodles".
Cut sheets into 8- to 10-inch pieces.
Pour ½ cup of sauce into the bottom of a 1.5-qt baking dish.
Assemble lasagna alternating layers of zucchini sheets, ricotta cheese, and sauce. After the last layer of zucchini, top with sauce and mozzarella cheese.
Bake for 30 to 40 min, remove from oven and top with fresh basil.
