Procedure:
To a medium saucepan add yolks, sugar, zest, and juice; whisk to combine. Set saucepan over medium-low heat, and cook the curd slowly while whisking constantly until it is thick, bubbling, and the temperature reaches 170 degrees when a digital thermometer is inserted.
Pour the cooked curd through a fine mesh strainer set over a bowl. Whisk in the butter a few pieces at a time into the strained curd until it melts. Cover the curd by pressing plastic wrap directly to the surface of the curd to prevent a skin from forming. Chill until completely set.
