Maple and Bourbon Glazed Peaches

Maple and Bourbon Glazed Peaches
Serves
Makes 2 peaches
Ingredients
2 peaches
2 tablespoons salted butter
1 tsp light brown sugar
1/2 tsp ground cinnamon
1/4 cup maple syrup
1 tablespoon bourbon
Ice cream
1/4 cup pistachios
 
Procedure
Start heating the Ooni oven; aim for around 400-500 degrees.

Cut the peaches in half and remove the pit.

Make the butter mixture by mixing the butter, cinnamon, and brown sugar. Set aside.

Make the maple bourbon mixture by mixing the maple syrup and the bourbon in a bowl. Set aside.

Add a drizzle of olive oil to a cast iron pan and add peaches cut side down.

Add to the Ooni and cook for 2-4 minutes, depending on how ripe the peaches are. The riper the peach, the less cook time.

Remove from the oven, flip, and add a dollop of the butter mixture to each peach half and cook for 2-4 more minutes.

Remove and brush each peach with maple syrup and bourbon. Cook for 1-2 more minutes.

​​​​​​​Remove from the oven, brush with the glaze, and serve with a scoop of ice cream, pistachios, and a drizzle of more glaze.
