Orange Blossom Almond Loaf

Orange Blossom Almond Loaf
Serves
Makes 1 5.5 inch loaf
Ingredients

4 eggs

3/4 cup sugar

1/2 cup flavorless oil

2 teaspoons almond extract

1 teaspoon orange extract

2 cups super fine almond flour

1/4 cup cake flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup honey

1/4 cup water

Pinch of saffron threads

1 tablespoon orange blossom water


 
Procedure

Preheat the oven to 350°F and grease a 5.5 inch loaf pan.

In a medium bowl, whisk the eggs, sugar, oil, almond extract, orange extract together until smooth and thick. Add in the almond flour, cake flour, baking powder, and salt and whisk until the batter is smooth with no lumps.

Pour the batter into the prepared pan and top with almond slices. Place into the middle rack of the oven to bake for 45-50 minutes, just until the center is set.

While in the oven, simmer the honey, water, and saffron threads together for about 3-5 minutes in a small saucepan. Remove from the heat and add in the orange blossom water.

Immediately after removing the loaf from the oven, pour the honey syrup all over the top. Let cool for 15 minutes then remove from the pan. Let cool another 45 minutes or so before slicing and serving.
