- ½ cup potatoes
- ¼ cup onions
- 2 tbsp olive oil
- ¼ cup water
- 2 eggs
- Salt and pepper
Procedure
Don’t reserve this scrumptious potato-egg pie just for the weekends anymore. Easy and so good anytime. For use with the small Lékué Steamer Case
Slice the potatoes fairly thick and julienne the onions. Place the potatoes, onions, water, olive oil, and a pinch of salt and pepper into the steam case. Close the lids and cook for about 5 to 6 minutes.
Beat the eggs and add another pinch of salt and pepper. Remove the steam case, and add the eggs. With a fork or spatula, gently mix all of the ingredients together. Close the lids and cook in microwave for another 2 minutes.
