BBQ Chicken Sandwich

Ingredients
- 1 pound of boneless, skinless chicken thighs
- 3 tablespoons of Chef Tom Douglas’ Rub with Love Smoky BBQ Rub
- 1 tablespoon rice oil (or canola oil)
- 3 tablespoons of Ancho Molasses BBQ Sauce
- 1 large burger bun
Procedure
Sprinkle both sides of Chicken with Smoky BBQ Rub and let rest for 5 minutes. Heat your pan to Med/High heat, add rice oil. Place rubbed chicken thighs on the pan until golden brown on the edges, about 4 minutes.
With tongs, flip chicken and place entire pan in a 350°F oven. Pull chicken out of the oven when the internal temperature hits 165°F and drain the excess oil. Glaze chicken with the Ancho Molasses BBQ Sauce. Set aside.
Place chicken on a toasted burger bun and add guacamole, cole slaw or your favorite toppings. Add another slather of BBQ Sauce and serve with potato salad!
