would this be a good knife to break down a chicken and ribs?

Apologies for the delay in responding. Yes. While I use this blade principally for veggie prep and peeling, I have cut chicken with it and it performs well. I have a full set of Miyabi, including larger blades, but I always find myself back with this one as it is such a good fit for my hand.
