A ratchet garlic and ginger chopper is best for quickly chopping small aromatics like garlic, ginger and shallots when you want consistent pieces without pulling out a cutting board and knife for every clove. It is especially handy for weeknight prep, sauces, marinades and stir-fries.
With the ratchet chopper, the texture is all about how many motions you use. A few ratchet strokes will give you a coarser chop, and continuing the motion will break ingredients down into a finer mince.
The ratchet chopper is designed for garlic, ginger and shallots, and it works best when ingredients fit comfortably in the chopping area. If you are working with larger cloves or thicker pieces of ginger, cut them into smaller chunks first for more even results.
Yes, the ratchet chopper collects what you chop right in the container, which helps you keep ingredients together while you prep the rest of your recipe. It is a convenient way to hold chopped aromatics until it is time to cook or transfer to another storage option.
For safest cleanup, take care around the blades since they can be very sharp. Empty the container first, then clean the parts thoroughly and handle the cutting components by non-blade edges whenever possible.
