In a mason jar, combine the vodka and the tea bags. Let tea infuse vodka at room temperature for 2 hours. Discard the tea bags.
In a cocktail shaker, gently muddle 1 sprig of thyme. Add ice, tea-infused vodka, lemon juice and honey syrup. Shake well.
Strain into a chilled coupe glass. Garnish with the remaining sprig of thyme.
