Lemony Cucumber Mint Mocktail

Makes 4 servings
Simple Syrup
Cucumber juice
Mocktail - (One Serving)
- ½ cup water
- ½ cup sugar
Cucumber juice
- 2 large English cucumbers, peeled and sliced
- ½ cup cold water
- 4-5 large fresh lemons, plus slices for garnish
Mocktail - (One Serving)
- 4 oz cucumber juice
- 2 oz lemon
- 2 oz simple Syrup
- Fresh mint leaves, plus more for garnish
Simple Syrup: Add the water and sugar to a small saucepan over medium heat. Stir the sugar till dissolved. Then pour into a glass jar and let cool.
Cucumber Juice: Peel and slice the cucumber. Place it in a blender. Add the water and blend till pureed. Strain the mixture using a mesh strainer over a measuring large cup.
Mocktail: Muddle a few leaves of fresh mint in a shaker and then fill it with ice. Add cucumber juice, lemon juice and simple syrup. Shake well. Place ice into a glass. Garnish with cucumber slices and lemon slices. Pour the mocktail into the glass and garnish with fresh mint. Repeat the same process for more servings.
