Ingredients
4 delicata squash
2 tbsp white miso
2 tbsp pure maple syrup
1 tbsp sriracha
1 tbsp olive oil
2 tsp kosher salt
1 tsp black pepper
Fresh chives
Procedure
Preheat your oven to 425F.
Cut the delicata squash into half-moons ½” -1” thick.
In a small bowl, whisk together the miso, maple, sriracha, olive oil, salt, and pepper.
Toss the sauce with the squash.
On a parchment paper lined baking sheet, lay the seasoned squash out in a single layer.
Roast until tender and lightly golden, 25-35 minutes.
Serve with a sprinkling of fresh chopped chives.
