Damascus Stainless Steel
The process to make each Shun Premier blade starts with a core of VG-MAX super steel. Resting on either side of the blade are 34 layers of Damascus stainless steel, providing a strong, durable base for every chop, slice, dice and cut. It’s the next step that really sets these Shun knives apart. Artisans hammer each one by hand using a technique known as tsuchime, leaving behind a beautifully textured finish that reduces drag as the blade glides through ingredients. The one-of-a-kind pattern also helps to release food so it doesn’t stick to your blade. Finally, the knife is sharpened so that the thin blade comes to a razor edge for added precision.
