Strawberry Stuffed French Toast

Strawberry Stuffed French Toast
Ingredients
  • 2 cups strawberries, sliced
  • 10-12 slices of brioche bread
  • 1 tbsp butter

Cream cheese mixture:
  • 8 oz cream cheese, softened
  • ¼ cup sour cream
  • ½ cup granulated sugar
  • 1 tsp vanilla extract

Egg mixture:
  • 5 eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon

Procedure
Slice strawberries into thin slices.

In a bowl, bring together cream cheese, sour cream, sugar and vanilla extract to make cream cheese mixture. Whisk to combine.

Spread cream cheese mixture onto a slice of bread, top with sliced strawberries, then top with another slice of bread. Repeat for 10-12 slices of bread, making 5-6 stuffed French toast in total.

Prepare egg mixture by whisking together eggs, milk, vanilla and cinnamon in a large bowl.

One by one, dip stuffed French toast into egg mixture and coat on both sides.

In a skillet heated under medium heat with butter, add French toasts. Do not overlap - it will probably need to be cooked in two batches. Pan fry for 1-2 minutes, or until bread is slightly golden brown, then flip bread and pan fry the other side. Lower heat at anytime as needed.

Remove from skillet and serve with powdered sugar, more sliced strawberries and maple syrup. Enjoy!
