Hi: I am another person in your class, so I hope I am telling you the correct info. This is my second class. With the first, a few participants used the prep packet to make items ahead, but the instructor really walked you through how to do anything. My daughter was my sous chef and it did help to have an extra pair of hands because I am not sure I could get everything done.
I had the same question about the rice but there is a distinct way to cool the rice. I am thinking we will make it first and then prep other things while it cooks. Then when it is done they will show us how to mix and cool it.
My biggest suggestion is to clean everything in advance, like your green onions, red pepper, etc. You don't need to cut them, but have them clean and ready to go. See you tomorrow!
